The truth about eggs.
Egg Whites vs. Egg Yolks. Bottom line: Both!
I have 2 eggs, + the equivalent of 2 or 3 eggs of liquid egg whites scrambled for breakfast (with salsa or reduced-fat feta) at least 3 times a week. I’m glad to hear it’s a good decision :). Click on the picture above for the full article.
Organic eggs? Bottom line: Yes, but don’t trust the box. Check here.
Unfortunately for the consumer, the terms on egg-cartons (like organic, free-range, cage-free, etc) do not have useful oversight as to how they are applied. This is problematic both for people who have ethical concerns about the lives of the egg-producing chickens, and for people looking to get the best eggs. Turns out, all eggs are not created equal. The nutritional value of an egg (it’s omega-3s for example) can depend on the layer’s feed and living arrangements. Click on the picture above for a good summary article, the contents of which were consistent with other reliable online sources.

Brown Eggs vs White Eggs. Bottom line: Who cares!!
There is absolutely no difference between different colored eggs except the shell. It depends on the breed of chicken that produces them, and the quality of the egg depends on the chicken’s feed and living arrangements.
Another good egg article with brown vs. white and organic info: Here.
After today’s crappy-ness, I needed a research project.
